Broccoli Rabe with Garlic and Golden Raisins

This simple combination of flavors is a winner; sweet raisins a perfect foil for the kick from the garlic and red pepper.  I always do the parboiling of the broccoli rabe ahead of time, and then when it’s time to eat it’s a matter of minutes to reheat it with the other ingredients.  Healthy, quick and delicious!

1 pound broccoli rabe (baby broccoli or rapini)

1 Tbs. extra-virgin olive oil

1/8 tsp. crushed red pepper

3 garlic cloves, thinly sliced

1/4 cup golden raisins

1/4 tsp. kosher salt

1/4 tsp. freshly ground black pepper

Bring a large pan of water to a boil.  Cut broccoli rabe into 2-inch pieces.  Cook broccoli in boiling water for 2 minutes; drain.

Heat a large nonstick skillet over medium heat.  Add olive oil to the pan; swirl to coat.  Add crushed red pepper and garlic to pan; cook 30 seconds, stirring occasionally.  Add broccoli rabe and raisins to pan, cook 2 minutes.   Stir in salt and black pepper.   Serves 4.
