Cowboy Cookies

These are my favorite cookies, and a total crowd pleaser. I’ve baked them at least 10 times in the past year. I’ve brought them to friends with new babies, picnics, holiday parties, and have made them for my family when a little comfort was needed. Almost every time I make these cookies, someone asks for the recipe. It’s one of those.

I have Julie Iantorno to thank for these fabulous cookies. Here is the note she included with the recipe: “There is nothing more comforting than hot chocolate chip cookies right out of the oven. This our family’s favorite cookie recipe.”

2 cup flour
2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 cup sugar
1 cup brown sugar
1 cup butter, softened
2 eggs
1 tsp vanilla
2 cup oatmeal
12 oz. chocolate chips
1 cup chopped walnuts
1 cup coconut (optional)
Sift together first four ingredients. In a large mixing bowl, cream together the butter and the sugars. Beat in the eggs, and then the vanilla. Add the dry ingredients. Then add the oatmeal, chips, and walnuts. Place large spoonful of dough on a greased cookie sheet. (Wet your fingers with water first so they don’t stick to the dough.) Bake at 375° for about 10 minutes or until golden brown.
