Kim’s Nursing Muffins

As promised, here is the healthy muffin recipe that Kristen Pruett sent to us. The recipe made about 35 muffins, so I have shared them with friends, family, and co-workers.  As you can see from the pictures, Wyatt also enjoyed the muffins! These would make a fairly healthy and delicious gift to anyone in need – not just hungry nursing mothers.

Makes 36-48 muffins
2 cups all purpose flour
2 cups whole wheat flour
2 cups sugar
1 tsp salt
1/2 tsp cloves
4 tsp baking soda
4 tsp cinnamon
4 cups (5 medium) shredded, peeled apples
1 cup shredded carrots (you can buy these ready to go at Trader Joe’s or Henry’s)
1 cup shredded coconut
1 cup raisins
1 cup chopped nuts ( I use walnuts)
1 1/2 cups vegetable oil
1/2 cup milk
4 tsp vanilla
3 eggs, beaten

Heat oven to 350.  Use greased muffin pan.  Combine the dry ingredients in a large bowl. Add fruit and nuts and mix well. Combine oil, milk, vanilla, and eggs and add to dry fruit mixture.  Stir until moistened. Fill muffin tins 3/4 full and bake for 20-25 minutes.

All packed up and ready to be delivered to Amanda (the new mommy)

Yum! Thank goodness these have carrots and apples in them!

I made a batch of these and took several to my pregnant daugher and her 10 month old son. They didn’t last 24 hours! This is a really good muffin, not too sweet or cakelike. I will be making these often and forever!

I’m so glad you all enjoyed these as much as we did. And, you definitely don’t need to be nursing to give these a try! Kid and adults both love these muffins.
