Shari’s Watermelon Salad

You must make this salad before summer is over. We had it the other night with some grilled fish and it was the perfect summer meal. My mother-in-law, Shari Cotton, is an incredible cook and she generously shared this easy, healthy, and delicious recipe with us. She typically serves it to guests on their sailboat in Kailua, HI. She says the salad it very portable; she puts the dressing on right before serving. Honestly, I could eat this salad every day until October.

Recipe: Toss together chunks of watermelon and crumbled feta cheese, along with toasted pine nuts, chopped Italian parsley, and a simple lemon vinaigrette (one part fresh lemon juice to 3 parts canola oil and salt and pepper to taste). Increase dressing per amount of watermelon chuncks.

Don’t you just love recipes like this? It’s almost impossible to screw it up. I used basil instead of parsley, and it was great.

Here is the inspiring story Shari shared with us about her very good friend, Gayle.

I have a friend named, Gayle, that is my hero. She has fought breast cancer three times and is currently in remission. She has been fighting cancer for most of 25 years and never complains. Because she is an RN she is very pro-active in her own care. After her second occurrence, she decided that obviously, life is short and she wanted to see more of the world. She became a travel agent and has probably been to about 40 countries by now. In fact, I was on a trip with her in India when she told me that her fight had begun for the third time. I went for an intensive spa week with her and she didn’t let having her arm in a sling keep her from spreading her magic smile and enthusiasm for life. She is truly an inspiration to all and loves everything spiritual. Emphasis on healthy nutrition has definitely played a big part in her recovery including this fresh salad.

We made this salad last week for a barbecue and it was a big hit. It was the perfect accompaniment to porterhouse steaks. Definitely give it a try.
