She said she saw Rena@healthtfitnessmeals make this last year and hasn’t stopped making it herself. 10 minute prep time leads to a perfectly flakey salmon covered with a rich honey mustard sauce flavored with garlic and smoked paprika. I thought 4 Tbs. of honey sounded like a lot for two servings, but lots of lemon balances it out perfectly. This was a big hit at my dinner table!
1 pound salmon filet
1 Tbs. olive oil
2 lemons; 1 sliced the other is for juicing
4 Tbs. honey
4 Tbs. Dijon mustard
2 cloves garlic, grated
1/4 tsp. smoked paprika
Pinch cayenne
1/2 tsp. salt
1/4 tsp. pepper
2 Tbs. chopped parsley
Preheat the oven to 400 degrees. Combine the olive oil, garlic, juice of half lemon, honey, mustard, paprika, cayenne, S&P, and set aside. Line a small casserole with the thin lemon slices and place the salmon on top. Pour half of the sauce over the salmon and spread until well coated. Bake for 12-14 minutes or until salmon is cooked through. Pour the remaining sauce over the salmon and broil for about 2 minutes more. Remove from the broiler and squeeze remaining 1/2 lemon on top. Sprinkle with parsley. Serves 2.
