Diane Morrisey has a popular Instagram food blog, with lots of appealing videos of the food she loves to make. This one is easy and delicious and a nice side for a simple dinner of roast meat or chicken.
1 pound asparagus, trimmed
olive oil
salt and pepper
1 cup shredded mozzarella
2 cups cherry tomatoes, halved
1/2 cup sliced basil
Balsamic Glaze (see recipe below or purchase a bottle)
Preheat the oven to 425 degrees. On a large baking sheet toss asparagus with olive oil, salt and pepper. On the other side of the sheet toss tomatoes with olive oil and salt and pepper. Roast 10 minutes. Remove from oven and sprinkle mozzarella on the asparagus. Roast 10 minutes more. If you like, finish under the broiler to brown the cheese a bit.
When done, move to a serving platter. Toss tomatoes with basil and top asparagus with them. Drizzle with balsamic glaze. Serves 4.
Balsamic Glaze: Heat 2 cups balsamic vinegar in a small pot over medium heat. Bring to a boil, reduce heat and simmer about 15 minutes until reduced and thickened to coat the back of a spoon. Cool. Will thicken more as it cools.
