Our book club has been discussing the amazing life and accomplishments of Helen Keller. It is incomprehensible how much she was able to learn and experience with such severe disabilities; a continuing inspiration for us to set our goals higher and count our blessings. Her optimism given her circumstances is astonishing. She left us with pages of thought provoking quotations; here are just a few to make us pause and feel hopeful.

We’re making Cassoulet-Style Italian Sausages and White Beans in the next few days per a glorious review from my mom. Will let you know how it goes, but I’m OPTIMISTIC it will be nothing short of delicious.
