Happy New Year! Wishing the world a much better year than the one we’ve just survived. Although the blessing of Sofia Grace Kirby, born March 27, did a lot to redeem 2021 for our family.
If I had been asked to bring an appetizer for New Year’s Eve, this would be high on my list. Easy to make but impressive and delicious, with both sweet and salty flavors. To really speed up the process, you could purchase a bottle of balsamic glaze reduction instead of making it yourself. ( I did!) Credit to a blog called Seasoned to Taste for this delightful treat.
1 loaf fresh Italian bread
2 Tbs. olive oil
1 tsp. minced garlic
1/2 cup Balsamic vinegar
8 oz. burrata cheese
4 oz. prosciutto
4-5 leaves fresh basil
1/4 cup honey
1/4 tsp. fresh black pepper (optional)
Preheat the oven to 425 degrees. Slice the loaf into 1-2″ slices and place on lined baking sheet. Mix olive oil and garlic in a small bowl and brush slices with mixture. Bake for 2-3 minutes until bread is crusty and slightly browned.
Prepare balsamic glaze by pouring balsamic vinegar in a small sauté pan on medium/high heat. Bring vinegar to a boil, reduce heat to low and let simmer until sauce thickens. This step takes between 10-15 minutes so be patient and give it time to thicken.
To assemble: After toasted slices have cooled, break apart pieces of burrata and place on top of each slice. Layer slices of prosciutto on top of burrata and sprinkle with black pepper. Drizzle each crostini with balsamic glaze and honey and top with fresh basil slices. Enjoy! Serves 6.
