At least once a month I will roast a turkey breast, both for the delicious dinner and the sandwiches to follow. And how good it makes the house smell! You don’t need to do much to prepare it, but if you want to take it to the next level here’s a great recipe to try. The fragrance created by butter, garlic, fresh herbs and lemon will have people wandering into your kitchen asking when dinner is ready? Another winner from Damn Delicious.
5 lb. turkey breast
1 lemon, sliced
6 Tbs. salted butter, room temperature
3 cloves garlic, minced
2 tsp. chopped fresh thyme
1 1/2 tsp. chopped fresh sage
1 1/2 tsp. chopped fresh rosemary
2 tsp. Kosher salt
1 tsp. pepper
Preheat oven to 325 degrees. Oil a 9 X13 ” baking dish. Spread the lemon slices across the bottom. Combine the butter, garlic, thyme, sage, and rosemary in a small bowl. Dry the turkey with paper towels. Loosen the skin and spread half the mixture under. Secure skin over the butter with toothpicks. Place the turkey on the lemon slices. Spread remaining butter over the turkey. Sprinkle with salt and pepper. Bake until the internal temperature reaches 165 degrees, about 1 hour 30 minutes. Let stand 20 minutes before slicing.
Note: It may take longer to cook depending the the shape of the breast; some are thicker in the middle. Next time I may try cooking it at 350 degrees to get more browning of the skin. A splash of wine in the pan adds to the fragrance!
