I stumbled on this recipe on Instagram yesterday. I had nothing planned for dinner and all of these ingredients on hand. It’s creator Diane Morrisey posts recipes under the heading Cooking Real Food for Real People and said this was probably her biggest go-to meal for herself. Amazing flavor for just a handful of ingredients. I served it over rice, but would love to try polenta and pasta as well. A keeper!
1 pound shrimp, seasoned with salt and pepper
Olive oil, to saute
1 onion, sliced
4 cloves garlic, chopped
3 cups marinara sauce
salt and pepper to taste
Pinch of chili flakes
1/3 cup white wine
6 basil leaves
1/4 cup chopped parsley
Heat the olive oil in a large skillet. Sauté the shrimp (may need to do in two batches so you don’t crowd the pan) a minute or two on both sides, flipping halfway through. The shrimp doesn’t have to be fully cooked as it will finish cooking in the sauce. Remove and set aside.
To the drippings, add the onion and garlic and more olive oil if needed. Cook until soft and tender. Add marinara sauce and wine, chili flakes and basil, salt and pepper. Simmer for 10 minutes. Add the shrimp back into the pan and cook for a few minutes. Sprinkle with parsley and serve over rice, pasta or polenta. Serves 4.
