Spaghetti Pie

Our good friends, Jeff and Amanda Goldberger, just had a beautiful baby boy named Andrew (Drew). Having a new baby is all consuming, and finding the time or energy to cook is almost impossible. After Wyatt was born, my mom brought us dinner almost every night for a month! We were so grateful for those home cooked meals, and they made us feel supported and loved.

Kristen Pruett, a friend and mother of two darling little girls, sent us her two favorite recipes to bring to friends with new babies – Spaghetti Pie and Kim’s Nursing Muffins. And when we received the Spaghetti Pie recipe again from long time friends Robbi Cambell and her daughter Allie Fomon (the only recipe duplicated!) we knew it must be special.

I made the spaghetti pie and the muffins for our friends, the new parents. Each recipe produces a lot of food, so we had more than enough for both their family and my own.  These recipes were a BIG hit with everyone, including Wyatt. They were also surprisingly easy to make. Thank you so much for sharing these special recipes with us! I will post the healthy muffin recipe soon.

Spaghetti Pie
1 lb. cooked spaghetti
3 eggs
1 cup parmesan cheese
1 cup softened butter
1lb cooked ground beef or turkey
2 jars of spaghetti sauce
2 cups shredded mozzarella

Mix together cooked spaghetti, eggs, parmesan cheese and butter.  Lay in a casserole dish.  On top of the spaghetti, layer the ground meat, spaghetti sauce, and top with mozzarella cheese.  Bake at 350 for 40 minutes or until bubbly.

Introducing Baby Drew! Isn’t he precious? He is also very mellow. One of those babies that makes you want another!

Thank you for the delicious spaghetti pie and muffins! Both were absolutely wonderful and so perfect and easy as we were getting used to being parents. Jeff was particularly in love with the muffins although he was a bit hesitant given that they are for nursing! Thanks for your thoughtfulness, Brittany! xo
