Angie Mar’s Chicken With Roasted Grapes, Garlic and Rosemary

Senior Editor Kat Kinsman of Food and Wine Magazine is a huge fan of their Best New Chef of 2017, Angie Mar. Kat thinks the best thing she’s ever had from Angie was a takeout foil pan of this dish after months of pandemic home cooking. A simple dish with just a handful of ingredients, it manages to taste elegant and special. The combination of crispy chicken roasting with sweet grapes, soft mellow garlic, and the accent of rosemary, makes for a lovely schmaltzy pan sauce. I like that you can prep it a bit ahead and then pop it in the oven a half hour before dinner. I used just breasts and legs, but next time will use all the pieces, which would be fun to eat with your fingers. My husband commented the next morning that the dinner “with the grapes’ was really good.

1 (4 lb.) whole chicken, cut into 8 pieces

4 tsp. kosher salt

1/3 cup extra-virgin olive oil divided

1 medium bunch red seedless grapes (about 2 cups), divided into small clusters

1 large garlic head, separated and cloves peeled (15 to 20 cloves)

1 (1/2 oz.) bunch fresh rosemary

1/4 tsp. black pepper

Preheat the oven to 400 degrees. Season chicken pieces with salt. Heat 1 1/2 Tbs. olive oil in a large ovenproof skillet over high. Add chicken pieces , skin sides down, and cook, undisturbed, until skin is browned and crisp, about 10 minutes. Remove from heat, and transfer chicken to a plate. Add grapes, garlic cloves, and rosemary to skillet, stirring and scraping up any browned bits. Return chicken pieces to skillet, skin sides up, nestling between and atop grapes. Drizzle with remaining oil.

Roast in preheated oven until a meat thermometer inserted in chicken breast registers 155 degrees, 22 to 25 minutes. Let chicken rest 10 minutes; sprinkle with black pepper. Serves 4.

Note: Peeling 20 cloves of garlic is a major pain in the neck. Some markets, including Trader Joe’s, sell small plastic bags or containers of already peeled garlic which was my best food find of the pandemic. Worth your time to search it out! Photo is of dish prepped and ready for the oven.
