Avocado Toast With Balsamic Mushrooms

This is so simple it’s hardly a recipe. I combined two of my favorite things into a favorite breakfast or lunch; ready in no time. Simply sauté some sliced mushrooms with a small amount of butter (don’t substitute olive oil; the butter gives it so much flavor.) Add a splash of good balsamic vinegar towards the end. Toast crisp a slice of sourdough and top with sliced or mashed avocado. Sprinkle of salt and pepper. Then pour over the mushrooms and eat with a knife and fork. Lots of options – add tomatoes? Parmesan? Just really really delicious!
