Coriander and Cumin Rubbed Pork Chops

This couldn’t be simpler; pork chops rubbed with a flavorful spice and garlic mixture and then quickly sauteed in the pan.  You could also use this rub on a pork roast.  These are powerful and delicious flavors .  My chops were thick,so to keep them juicy after browning the first side, I turned them over, lowered the heat and put a lid on the pan to finish.  Credit for this recipe goes to Darla; who notes that for an even more potent result,you could toast and grind the spices yourself.

1/4 tsp salt

1 Tbs. ground cumin

1 Tbs. ground coriander

2 cloves garlic, minced

2 Tbs. olive oil

2 boneless pork loin chops (about 1 inch thick)

Black pepper to taste

Mix together salt, cumin, coriander, garlic, and 1 Tbs. olive oil to form a paste. (I used a mini-blender). Season the pork chops with pepper and rub with the paste.

Heat the remaining Tbs. oil in a skillet over medium heat, and cook the chops about 4 minutes on each side. Turn the heat down to medium low if the paste begins to burn.
