Tequila Shrimp

You would never guess this recipe is from a diet website called Hungry Girl, as it is so tasty and satisfying!  It comes together in minutes, and when served with rice it  more than satisfied my Hungry Husband (that’s a great name for a website itself.)  Delicious!

8 oz. raw shrimp

2 Roma tomatoes, chopped

1 small onion, sliced

3 Tbs. (1 shot) tequila

2 Tbs. lime juice

2 Tbs. coarsely chopped fresh cilantro

1 tsp. minced garlic

1/4 tsp. chili powder

1/4 tsp. salt

Bring a large pan sprayed with nonstick spray to medium heat. ( Or just add a small amount of olive oil to the pan.)  Add onion and garlic and cook until onion is slightly translucent, about 3 minutes.  Add tequila to the pan and stir. Cover the pan and simmer for 5 minutes.

Add the shrimp and cook for about 3 minutes, until shrimp are nearly opaque.  Add tomatoes, lime juice, cilantro, chili powder, and salt and mix well.  Stirring occasionally, cook until tomatoes have softened and shrimp are cooked through, about 2 minutes more.  Serves 2

Yum…loved it! Added more shrimp due to the hungry husband! So easy & good -felt rather decadent pouring the shot of tequila!! Thanks Hildry!!
